One of my goals for 2025 is to ACTUALLY write my recipes down and share them with y'all, so here I am.

This past weekend, I was lovingly tasked with making Easter Dinner for my family. My house isn't a huge Easter household. We don't go to church, and this year there was barely any candy. However, no holiday with my family can pass without a good meal and a simple prayer.

My mom got me shrimp, salmon, and green beans from Costco. "I don't want no ham or turkey this year," she said after buying my menu items. New dietary restrictions in my family were unlocked this year, meaning meat/poultry often lead to at least one upset stomach. I can't have that on my watch!

I love seafood. I have a shrimp tattoo on my forearm. My friends still send me pictures of whole fish they eat at restaurants after my Hot Girl Whole Fish Summer of 2023. I think it's time for Hot Girl Whole Fish Spring/Summer 2025 to emerge. She's bigger, badder, with sharper knives and somehow, a softer heart.

If you're intimidated by cooking seafood or being the only pink princess in line at the Whole Foods seafood counter, this sheet pan shrimp & salmon recipe is a great place to start. Enjoy!

Easter Dinner! I ended up making more shrimp and green beans, hence my second pan :)

Sheet Pan Shrimp & Salmon with Green Beans

Serves 6

1 cup of green beans, washed with ends trimmed

2lb Atlantic Salmon, cut into six filets

12-15 large shrimp, peeled and deveined

3-4 tbsp olive oil (enough to coat the seafood and string beans)

3 tbsp of seasoning blend (see below!)

1 lemon, thinly sliced into rounds

Seasoning Blend

How I season my food is between me and God. LOL. But in all seriousness, seasoning is sacred. The way I cook and season my food is an amalgamation of my tastes, my family's tastes, and everyone I've ever cooked with. Below is a list of everything I pulled from my spice cabinet with ROUGH estimates of how much I used.

Whisk these together in a small bowl and set aside.

1/2 tbsp coriander

1/2 tbsp garlic powder

1/2 tbsp paprika

1/2 tbsp cumin

1/2 tbsp Trader Joe's Cuban Style Citrusy Garlic Seasoning Blend

Healthy dashes of old bay, white pepper, Borsari Citrus Seasoning, and Sea Salt

Whisk these together in a small bowl and set aside.

  1. Preheat oven to 425°F.

  2. Line large sheet tray with parchment paper and set aside.

  3. Place green beans into a bowl and toss with olive oil and 1 tbsp of the seasoning blend. Once green beans are evenly coated, spread them onto the sheet pan.

  4. Place salmon filets in the same bowl. Toss with olive oil and 1 tbsp of the seasoning blend. Once evenly coated, place them on top of/around the green beans. Don't over crowd the pan!

  5. Place the lemon slices on top of the salmon and green beans, making sure to save some for the shrimp.

  6. Bake the salmon and green beans for 5 minutes. While that's in the oven, add the shrimp to the same bowl, toss with olive oil and 1 tbsp of the seasoning blend.

  7. Once five minutes are up, remove the sheet pan from the oven. Place shrimp into the pan with the remaining lemon slices.

  8. Bake for 6-8 minutes, or until both the shrimp and salmon are cooked to your liking.

  9. Serve!

A sheet tray lined with parchment is topped with baked salmon, shrimp, green beans, and lemon slices.
My Easter Monday version. I seasoned the green beans with salt and pepper only (at the request of my mom, who likes a simpler green bean), and seasoned the salmon and shrimp the same. <3
